Overrun by courgettes...

We've been overrun by courgettes! Clearly seven plants is too many... we've eaten them nearly every day for the last couple of week, given them to anyone who will taken and I've still got 12 in the fridge....

Recipe to use up some of your courgettes:
3 eggs, 225g castor sugar, 250 ml oil, 300 g coarsley grated courgettes, 250 g SR flour, 1 tsp each cinnamon, mixed spice and 60/100g chopped walnuts, few drops vanilla essence
Beat eggs, oil, sugar, van ess together, then sifted dry ingredients, then nuts. Bake in centre preheated oven 180 C for about 1 hr until it shrinks from edge of tin. Cool for a few mins & turn out . Serve- buttered or plain
